This is one of my favourite gluten free flour, mixed with rice flour it can be used in cakes and tastes wonderful and achives great results

As most gluten free flour mixes use lots of cornflour, which I cannot eat, I make my own flour mixes up and use this tapioca flour which is excellent. It can be difficult to get hold of organic tapioca flour so thumbs up to Goodness Direct!

I'd seen this as a component of ready-made gluten-free flour mixes, and as I needed to make up my own, decided to add a bit to stop the 'crumbly' texture I've found in the past: 1/2 teaspoon in one and a half cups of flour (chestnut and potato) worked a treat ! Apparently using too much can make the texture 'gummy' though...

This is a very useful flour to have, I use it for thickening sauces and soups, and also add it to cookie mixtures which give it a light, shortbread style texture.
