Usage

In India, chickpea flour is widely used for its versatility in batters, soups, desserts and some breads. This delicate yellow flour is more commonly known as besan or gram flour. It's a fantastic substitute for eggs and is often mixed as the base of vegetarian omelets.

This is great. As a new vegan (from vegetarian), I've been experimenting lots. Makes great vegetable 'bhajis' - just mix chick pea flour with water and spices of your choice, dip vegetables in and fry. It also makes great soyburgers which I have to say are my favourite 'vegan' burgers. Just mix Goodness Organic soy mince with some soysauce/bouillon, crushed garlic, your favourite spices and some chick pea flour, make into balls and fry - really yummy. By the way these recipes are from books and the internet, so I can't take credit for creating them!!
