Bread Pudding - Mon 8th Aug 2011
Break 450 g stale bread into small pieces, soak in boiling water, squeeze off excess water and mash with a fork. Mix in 225 g raisins, 100 g sugar, a good pinch of nutmeg and 2 beaten eggs. Add sufficient milk to enable the mixture to drop from the spoon. Place in a greased pie dish and dot with butter. Bake at 180 degrees C/gas mark 4 for 1 hour. Turn out, dredge with sugar and serve.

These Goodness raisins are excellent to use as they are or in baking. They are very good quality, plump and not too hard.
