Recipe

Apricot & Tofu Dessert
Soak 110g apricots overnight and simmer for 10-15 minutes until tender. Drain, reserving the juice.) Liquidise with 225g tofu and 2tbsp of clear honey. Add juice until thick and soft. Blend again, pour into sundae glasses and chill.

Dried apricots are high in anti-oxidents and are a great alternative snack to sweets!

I bought the apricots to make chorizo and chickpea stew. Before putting cut pieces of apricots into the stew, I tried a few and I liked it very much as it was tasty and was not sickeningly sweet. It makes a great snack!
