Cooking Instructions
Firstly remove the outer coating of the quinoa, do this by soaking the grain in water for a few hours, then changing the water and resoaking, or rinsing it in running water either in a fine strainer or in cheesecloth.
Treat quinoa the same as rice, bringing two cups of water to one cup of grain and bring to the boil.
Cover at a low simmer and cooking for 14–18 minutes or until the germ separates from the seed.
The cooked germ looks like a tiny curl and should have a slight bite to it.
Usage
Quinoa is excellent in soups, casseroles, stews and stir fries, as well as cold in salads.
Cooking time is approximately 15 minutes, much shorter than beans.
Quinoa is very high in protein, it is also a good source of dietary fibre and phosphorus and is high in magnesium and iron.

This 1kg pack of quinoa is excellent value for money.
I serve this as a substitute for rice or couscous. It has a nuttier flavour that you have to get used to but it's very good!
I also use it as a substitute for bulgur wheat in tabbouleh.

Tips
Cooking tips - Mon 14th Feb 2011
I cook Quinoa as I would rice: 1 part quinoa to 2 parts liquid (I like to use homemade veggie stock; water is great but adds no flavuor), I bring to a simmer and cover for 15 minutes at a reduced heat. As for rinsing, I learned to rinse the quinoa in a mesh strainer until the water no longer foams on the top of the grains. Hope this helps!
