Soak a whole packet of wheat berries overnight, and then transfer to sprouting trays for a couple of days (if the weather is cold, it will take about 5 or 6 days to sprout). Rinse once a day.

By the time the berries have sprouted and have reached about an inch long, blend them in a food processor, or a stone mill, with a pinch of salt.

Transfer to a loaf tin and bake for 3 to 4 hours on a low heat, max 160°

This makes a lovely sprouted wheat loaf, as sweet as a cake but with no harm in it! Delicious with any nut butter.

Experiment by adding raisins, carrots, ginger, seeds, etc, but no water or milk or tea will be needed for the recipe.
