Serving Suggestion

Serve in place of rice with curries or other savoury dishes.

Cooking Instructions

To cook: (quick method) 1 part couscous to 2 parts warm water (salt to taste). Allow couscous to stand 5-10 mins in warm water. Spread on baking sheet and place in hot oven for 3-4 mins. Stir in herbs and margarine to taste.

Ingredients

Just white couscous from France and nothing else.

Mediterranean Vegetable Couscous Salad - Sun 21st Aug 2011
Chop 400 g Mediterranean vegetables (aubergines, courgettes, peppers and onions), toss with olive oil and crushed garlic and roast at 200 degrees C/gas 6 until tender. Meanwhile heat a dry frying pan until hot and toast 200 g couscous for 2-3 mins, tossing gently until the grains go slightly golden. Transfer to a bowl, pour over 300 ml hot vegetable stock, cover with cling film and set aside for 10 mins. Fluff up the grains with a fork and stir through 3 tbsp of a balsamic vinaigrette, 80 g crumbled feta, 100 g quartered vine tomatoes, the roasted vegetables and some chopped coriander. Season to tasted and serve.
