Roasted buckwheat is a fantastic alternative to rice and in spite of it's name buckwheat is not related to wheat so it naturally gluten free. Roasted buckwheat is high in many essential minerals, buckwheat makes a good addition to hearty soups or can be served as part of a meal in place of rice.
- Add 1 cup roasted buckwheat to 2 cups boiling water or stock.
- Bring to the boil and then cover and turn right down to lowest hob setting and cook for 15 minutes until water is absorbed.
- Remove from heat and allow to stand for 10 minutes
- Fluff with a fork and use in place of rice.

Energy 1780kJ/419, Protein 8.8g, Carbohydrate 92.4g, Fat 16g

Store in a cool dry place. After opening re-seal the pack, or store in an airtight container.

Buckwheat with peppers
- Put 1 cup roasted buckwheat. I clove crushed garlic. 2 cups vegetable stock in a pan and simmer until liquid is absorbed.
- Add juice and pulp of 1 lemon, 2tsp butter, dried herbs to taste.
- Cut 4 red peppers in half and grill until the skin is charred. Fill the peppers with the mixture and roast until starting to brown.

Kasha has a lovely nutty and lightly roasted taste. It's a great addition to muesli or it can be added to porridge. When cooking, it has a short cooking time and it can be cooked together with quinoa or rice, etc to create a more interesting flavour. Kasha is not a grain but a seed and can be suitable for those avoiding traditional grains.

This tasted really strong - and not like anything I've tried before so I can't even describe it very well. It has a kind of burnt taste and is very crunchy; when cooked it turns to mush if left to cook for too long but still has odd little sharp bits. My oldest loves it and munches on it quite happily as well as adding it to the buckwheat flakes we got which were much milder and I enjoyed those far more. The other two kids don't mind it but don't go out of their way for it, they prefer the flakes too. All in all, I would say it is definitely worth a try for the price and for the health benefits; but if you know you have sensitive taste buds, try the untoasted varieties first ;-)

Lovely nutty flavour. Tends to disintegrate if cooked too long, go for the shorter length on the instructions. Good base for gluten free packed lunches - I add avocado, tomato, tofu and lots of lemon juice.
