Product Details

There are two types of split peas used for split pea soup – green and yellow. Both are interchangeable so it doesn’t matter which you use for making split pea soup. Just bear in mind they may need soaking before they can be cooked – anywhere from 2 hours to overnight depending on the brand and recipe.

Cooking Instructions

To cook: Soak overnight. Simmer for 20 mins or till tender

Recipe

Split pea soup
Serves 4

Ingredients:
200g/7oz Green or Yellow Split Peas
1 Large Onion, finely chopped
50g/2oz Butter
1.1L/2pts Strong Vegetable Stock (other stock can be used)
Bouquet Garni
Salt and Black Pepper

Instructions
1. Place in split peas in a large saucepan, cover with plenty of cold water, bring to the boil and continue to boil for 5 minutes. Remove from the heat, cover and leave to soak for 2 hours.
2. After this time, drain the peas well.
3. Melt the butter in a large saucepan; add the onions and sauté for 3-4 minutes.
4. Add the stock, drained peas, salt, pepper and bouquet garni, bring to the boil, reduce the heat, cover and simmer for 2 hours, stirring from time to time.
5. Remove the bouquet garni and cool slightly.
6. Transfer to a liquidiser or food processor and process to a purée. Alternatively press through a sieve.
7. Return to the pan and heat through, adjusting the seasoning if necessary. Serve hot.

As it's difficult to get yellow split Mung beans, yellow split peas are perfect for this recipe.

1 cup of split peas, rinsed and drained.

7 cups of water.

1 cup of chopped tomatoes.

1 medium courgette, peeled and chopped.

5 tablespoons of oil for cooking.

Half a tablespoon of minced ginger.

1 and a half tablespoons of cumin seeds.

1 tablespoon of black mustard seeds.

1 green chilli minced.

1 and a half teaspoons of turmeric.

1 tablespoon of salt.

3-4 cloves of garlic or a quarter teaspoon of hing.

Fresh coriander leaves as a garnish, not essential to recipe, but is nice if available.

In a large pot, put in 3 tablespoons of oil, split peas, turmeric and garlic.

Fry for 30 seconds, add vegetables and for 1 more minute.

Add water, chilli and ginger, bring to the boil, then reduce to a simmer and cover.

Cook for approx 1 hour or until split peas have turned into a thick soup.

In a small pan add the rest of the oil, along with cumin and mustard seeds and salt.

When the seeds start to crackle, pour them into the bean pot and mix.

Serve hot, garnished with fresh coriander.

We like yellow split pea soup, they are a good source of minerals, especially manganese. They are full of soluble fibre and can help those suffering from irritable bowel syndrome. Known to stabilise blood sugar and help reduce plaque in the blood vessels, they really are a "super food".

During Autumn, and Halloween or Bonfire Night in particular, yellow split peas make a great addition to pumpkin soup.
Spice it up with some chili or paprika for extra warmth.
