Lentil Winter Supper Veg HT MC 25mins Serves 4 Ingredients 25g/1oz Butter 2 Carrots, sliced 1 Onion, chopped 1 Green Capsicum, seeded and sliced 2 Tomatoes, chopped 1 Cooking Apple, peeled, cored and chopped 1 Garlic Clove, crushed 1 tbsp Fresh Sage, chopped 100g/4oz cooked Lentils 1 tbsp Raisins 2 tbsp Unsalted Peanuts Salt and Pepper 275g/10 oz Natural Yoghurt 25g/1oz Cream Cheese Instructions 1. Melt the butter in a pan, add the onion, carrots, pepper, tomatoes, apple, garlic and sage and fry gently for 15 minutes. 2. Add the lentils, raisins, peanuts, salt and pepper and continue to cook for 3 minutes. 3. Meanwhile, in a bowl, mix together the yogurt and cream cheese, blending well. Stir into the vegetable mixture and heat gently for 5 minutes. Serve immediately.

Made a very tasty Tarka Dhal with this in the slow cooker, different in taste to the usual yellow split pea, more earthy and held it's texture more, lovely!

Otherwise known as Puy Lentils, these are the King and Queen of the lentil world. They hold their shape well after cooking and are very tasty.
