Butter beans are large, creamy-coloured beans with a soft, floury texture when cooked. They make a great vegetarian pate and work well in mixed bean salads, or rich, wintry stews. They are also a useful source of potassium.

Product Details

Like most beans, butter beans are rich in the best sort of fibre - soluble fiber - which helps to eliminate cholesterol from the body. They are a good source of potassium, iron, copper and manganese. As a high potassium, low-sodium food they help reduce blood pressure. Not only are they low in fat, but when combined with grains, beans supply high quality protein which provides a healthy alternative to meat or other animal protein.

Serving Suggestion

Bean and beetroot salad:
Mix 1tspn honey, 3 tbspn, 1 tbspn red wine vinegar, pour over 100g (4zo)cooked beans, 1 large beetroot, 2 apples*peeled and sliced. Stir, chill and serve. Very popular in britain as an accompanying vegetable. Ideal in casseroles or cold in salads.

Cooking Instructions

Soak overnight. Rinse.Boil briskly in fresh water for at least 10 minutes. Simmer for 1.15 hrs, until tender.


Just butter beans and nothing else.

Butter bean stew
1 1/2 lb dried butter beans
1/2 cup pure olive oil
2 medium onions, finely chopped
1 each garlic clove, pressed
3 large ripe tomatoes, peeled seeded & diced
3/4 cup tomato sauce
3 tbsp Ialian parsley, minced
Freshly ground black pepper
2 cup water

Put the beans in a large pot and cover with water. Bring to a boil over medium heat and cook, partly covered, for about 1 hour, or until beans are almost tender. Drain and set aside.

Preheat the oven to 400F.

In a heavy saucepan, heat the oil and sauté the onions until translucent. Add the garlic, tomatoes, tomato sauce, parsley, salt and pepper, and water. Simmer, covered, over low heat for about 20 minutes, until sauce starts to thicken. Transfer the beans to a casserole or baking dish, pour the tomato mixture over, and stir. Bake for about 40 minutes, until the beans are tender and the sauce is thick. Serve warm or at room temperature.

Butter Bean & Chick Pea Hummus

I cup of dried butter beans

1 cup of dried chick peas

A good dollop of tahini - 1 tablespoon is usually enough

Juice of 1 - 2 lemons

As many garlic cloves as you can stand - I use a lot

Some celtic ( or good quality - unrefined) salt - to suit taste

A good quality olive oil - add enough to make it blendable

A little water - to aid blending

Wash & soak the peas & beans - cover with boiling water in a large bowl and leave overnight

Cook the beans & peas until tender, drain away the cooking water

Blend everything until smooth and creamy

Jar while still hot, pour a little extra olive oil on the surface and seal.

Allow to cool and then place in the fridge - this will keep for up to a week - possibly longer (although in our house it doesn't get the chance, we like it served as an accompaniment to salads, use it as a spread, even on its own - it is delicious

**Decided to experiment one day and added butter beans to the mix

The butter beans make this hummus extra smooth and extra creamy.

My husband now asks for them to be included when I make hummus**

Butter beans are fantastic to use in soups or stews, great as a base for making bean pate, and I really like them tossed into a mixed salad too. Really filling and hearty.

Butter beans look like lima beans, but are sweeter and avoid the slime factor of canned limas. These beans are the best I have ever found--they are firm and well-cleaned, ready for use. I have an old Shaker recipe for a butter-bean-potato salad: I use a can of these beans, some boiled and diced red potatoes, and the corn cut from a fresh ear of corn. The dressing is mayonnaise, a little olive oil, and lemon juice, with salt and pepper. Eden makes it possible to do this recipe at any time with these hard-to-find beans. They're great!

I disliked butter beans as a kid, realised they were never cooked or seasoned correctly. The trick is to wash well and soak overnight in boiling water, never add salt while cooking as this will toughen the skin and they won't cook. They can be used in so many dishes from pasta to soups, stews and especially good in stir fries.
