Chilli Quinova

  • 1-2 tbsp olive oil
  • 200g/7oz Quinova mince
  • 1 large onion, peeled & chopped
  • 1 large garlic clove, crushed
  • 1 x 400g tin tomatoes
  • 5ml/3fl oz to 150ml/5fl oz vegetable stock (optional if required)
  • 1 tbsp tomato puree
  • 1 tsp mild chilli powder
  • 1 tsp crushed chillies
  • salt & freshly milled black pepper
  • 1 large green pepper, de-seeded & chopped
  • 1 x 130g tin red kidney beans, drained & rinsed

    Method

    Heat the oil in a non-stick pan. Add the QUinova mince and fry over a low heat for 5-10 minutes before adding the onion and garlic. Fry gently for a further 2-3 minutes. Next add the tomatoes, stock, puree, chilli powder and chillies. Season with salt and pepper and simmer for a further 15 minutes, adding the chopped peppers and kidney beans 5 minutes before the end of cooking. Stir well.

    Serve with boiled rice and salad.
