Ingredients

  • 1-2 tbsp olive oil
  • 200g/7oz Quinova Chunks
  • salt & freshly milled black pepper
  • 2 tbsp pesto
  • 2 tbsp creme fraiche or suitable substitute
  • 50g/2oz sundried tomatoes, chopped
  • 25g/1oz parmesan shavings or suitable substitute

    Method

    Heat the oil in a large non-stick frying pan, add the Quinova and cook gently over a low heat for 8-10 minutes, tossing frequently. Season well. Remove from the heat, transfer to a plate and cover.

    Meanwhile, prepare the pesto sauce. Combine the pesto, creme fraiche and tomatoes. Mix well and pour into the pan. Heat gently for 2-3 minutes before stirring the Quinova chunks into the sauce. Stir to coat the chunks and serve immediately.

    Serve on a bed of pasta and top with parmesan shavings.
