Fruity Quorn Curry Recipe (serves 3)
Ingredients
3 tsp mild curry paste
2 tbsp apricot chutney
1 small (8oz) tin chopped tomatoes
1 tbsp sultanas
3 tbsp water
4˝oz Quorn pieces
1 medium onion, sliced
2oz mushrooms, sliced
1 small yellow pepper, deseeded and sliced
1 medium carrot, cut into strips
1 stick celery, chopped
1 medium red apple, cored and chopped
Method
Blend the curry paste, chutney, tomatoes, sultanas and water in pan. Cook for 2 minutes.
Add the Quorn and onions. Simmer for 5 minutes to allowe the Quorn to absorb the flavour of the sauce
Add the pepper and carrot. Cook for 5 minutes. Add the mushrooms and cook for 1 minute
Just before serving, add the celery and red apple, and heat through
Serve with boiled rice
