Peanut Bite Snacks - Quorn Recipe (Serves 3 as a snack)
Ingredients
4½oz Quorn pieces
2 tbsp peanut butter
2oz wholemeal breadcrumbs
1 egg, lightly beaten
Oil for frying
Tomato dip
 4 tbsp low-calorie mayonnaise
2 tsp tomato puree
4 tsp natural yoghurt
3-4 drops tabasco sauce
Method
Spread peanut butter generously along one side of each piece of Quorn
Coat in beaten egg and roll in breadcrumbs
Fry in an inch depth of hot oil in a frying pan until golden brown
Drain on kitchen paper and serve immediately
To make the tomato dip, blend all the ingredients together and serve in a small bowl.
