MethodFirst soak your pineapple in 250ml water for 15min. Keep the soaking juice. Then fry the finely chopped onion in the oil with the bay leaves and lemon grass. Add the chilli powder, chillies, paprika, mustard seeds, turmeric, salt, pineapple, fish & prawns. Cook for 5 min. Pour in coconut milk & 150ml of the pineapple soaking liquid.
