Coeliac-friendly fruit cake for those special occasionsYou'll need a glass or pyrex round dish approximately 20cm across and 10cm deep.First, in a mixing bowl cook 1kg of mixed dried fruit with 2 tablespoons of water and a few drops of almond essence and orange essence on high for 5 minutes. Melt 125g of butter and add this to the fruit together with a teaspoonful of nutmeg, 2 teaspoonfuls of mixed spice, 4 beaten eggs, 440g of crushed pineapple (tinned will do), 125g of ground almonds, 1 teaspoonful of xanthan gum, 1 teaspoonful of cream of tartar, 1 teaspoonful of bicarbonate of soda, and 200g of gluten free flour (or 100g soya flour, 50g rice flour and 50g potato flour). Mix it all together, pour it into the pyrex dish (which should be lined first with greaseproof paper), and cook it on high for 15 minutes.
