Well there is nothing like a new recipe to re-inspire resolve. This Carrot Salad with Mustard Seeds grabbed my attention as I truly am a carrot fanatic and I do love popping mustard seeds.
You will need:
3 medium carrots, peeled and grated
2 tablespoon olive oil
1 1/2 teaspoon black mustard seeds
1 teaspoon white sesame seeds
Unprocessed sea salt and freshly ground black pepper to taste
How to make it:
In a bowl, toss the grated carrots with salt and pepper.
Heat the oil in a small pan over low heat.
When hot add the mustard and sesame seeds. Put the lid on the pan until you think the mustard seeds have finished popping.
Pour this mustard infused oil over the carrots and stir well. Serve straight away or chilled. Once you have tried this method of making mustard seed oil dressing you may want to use it with a whole lot of different vegetables. I love carrots prepared this way with a nut roast or quorn.
